Slice your avocado in half, remove the pit. slice about 5 times on each half, scoop out slices with a spoon, add your lemon juice to the slices, and (you guessed it) set aside.
Layer your tortillas with damp paper powers, set on a baking pan or sheet, cover it tightly with aluminum foil, and set inside an oven set to warm (160º F).
Place your skillet or pan on the hottest fire you can muster and add 2 tbsps of your oil.
Add your diced onions to your cooking vessel of choice, sauté until golden and semi-translucent (about 5-8 minutes), and then evacuate to a plate.
Put your pan or skillet back onto the heat, add your ground beef, smash and crush the beef until it’s roughly flat (not really looking for a perfect shape), add 2 tbsp of your seasoning, smash and crush your meat some more, and allow to form a crust (about 3-5 minutes).
Flip your meat and allow the other side to form a crust as well (about 3-5 minutes).
Use your spatula to chopped the meat until you have nice sized chunks, add your onions back in and layer them into the beef, add your cheese into the beef mixture to allow the slices to melt, mix it all together, and then evacuate the pan or skillet onto a burner set at it’s lowest to allow to stay warm.
Remove your tortillas from the oven and lay them next to each other with a few inches of overlap.
Spread out your chopped cheese sauce, and then top with the cabbage, tomatoes, meat mixture, avocados, and your crushed Cheetos.
